Homemade Poppy Seed Dressing

This is my favourite dressing and its taken me a few years to get it just right. I don't often measure my ingredients so it took me a while to decide on the correct ones to share with you.

Homemade Poppyseed Dressing
  • 1 teaspoon honey mustard
  • 1/3 cup vegetable oil
  • 1/2 teaspoon salt
  • 1/2 cup thick yogurt, plain
  • 1/4 cup apple cider vinegar
  • 1/4 cup splenda or granulated sugar
  • 1/4 cup sweet white onion
  • 1 tablespoon poppyseeds
With a hand blender, mix the liquid ingredients and onion until creamy and smooth.Stir in poppyseeds.Store in Fridge up to one week, stir or shake before use.

Super-easy Summer Salad

Shopping and Prep:

In a large bowl place:
  1. Baby spinach, a large handful per person.
  2. 1 cup of strawberries, washed, stemmed, and sliced.
  3. 1/2 a green onion per person, chopped
  4. 1-2 tablespoons of Poppy Seed Dressing, per person
Optional Salad Additions:
  • Spring Mix or other Lettuces
  • 2 tablespoons of toasted almond slivers.
  • 1 tart green apple
  • Other vegetables: cucumber, mushroom, red pepper, carrot.
  • Crispy, Fried Chow Mein noodles
