Best Ever Flourless Cookies- Magic Peanut Butter Drops

Ever have an entire jar of peanut butter that needs to be used up in a short amount of time?  Make cookies!  This recipe is taken directly from the back of the KRAFT Peanut Butter label.  Sorry, but this one is NOT nut-free, and I have tried using Splenda in place of sugar but it doesn't work.  Make double and triple batches because these cookies will disappear fast, and any leftovers freeze really well. I mix each batch separately because the batter is quite stiff and hard to stir by hand when it gets into larger quantities.

/mix well/
  • 1/2 cup white granulated sugar
  • 1 large egg
  • 1 cup peanut butter
Pre-heat oven to 325°F. Mix all ingredients until well blended.  Chill mixture for 30 minutes if your kitchen is really warm like mine.

I use 2 cold teaspoons to roll a small amount of mixture into balls place, 4 inches apart, on parchment lined baking sheets. Flatten with a cold fork. Makes approximately 24 small cookies.

Bake cookies for about 10 minutes or until lightly browned. (Do not overbake, they will continue to cook a little and harden after being removed from oven.) Cool 5 minutes on baking sheets; transfer to wire racks. Cool completely.

Variations:
I sometimes push a Hersey's Kiss, M&M, or Smartie in the center of each cookie before baking.
Or put a handful of chocolate chips in a Ziploc sandwich bag, seal and place in a cup of hot water to melt chips. Cut the tip off the bag and drizzle cookies with melted chocolate once out of oven.
